The U.S. wastes more food than any other country while 50 million Americans go hungry. This is our time to innovate- why waste it?
Americans waste more than 40% of the food we produce- costing us more than $100 billion annually. At the same time 33.5 million adults and 16.7 million children have inconsistent and inadequate access to food.
These are just a few places food waste collects:
Farms - In some cases surplus crops are left to rot in the field when harvesting food is not worth the cost of labor. Farmers also contend with leftover fresh food not sold at the market.
Stores - Expiration dates protect us from consuming food that may become harmful- but too often these dates are arbitrarily assigned and cause edible food to be dumped, along with produce that may be at peak ripeness or has minor blemishes.
Homes - Take a look inside your fridge- do you eat everything you buy? Think of all the energy used to grow, harvest, process, package, and transport the food that goes down your garbage disposal.
Ultimately this valuable food meets its fate at the landfill where it emits methane gas- a potent greenhouse gas that contributes to global warming.
In the 10 cities visited by the Millennial Train Project I will convene stakeholders including: chefs, food pantry/bank staff and volunteers, business owners, small farmers, school, local and state government officials, policy makers and entrepreneurs and discover how they innovate to prevent food from going to waste while feeding their communities.
This project aims to answer the following question:
How can we innovate the food chain to prevent waste and link quality, surplus food to those most in need?
conversations will be documented through photos, video and blog posts-
resulting in a national dialogue that provides practical
approaches to address waste and food insecurity.
